“We had a wonderful Easter dinner here in Florida and found your recipes in Let’s Cook Tonight  to be delicious and easy.  I chose 3 recipes and liked preparing them ALL!  Your instructions were simple—specific, step-by-step—for me to follow.  The tomato salad with all the fresh cut basil took ten minutes and we continued to finish it the next day.  Yummy!  The apple walnut salad was somewhat like a Waldorf salad.  Well worth the work time of chopping celery and apples!  I used Hellman’s mayonnaise and  Knudsen sour cream as you suggested.  The salad was a nice accompaniment to the ham.  The scalloped potatoes were the easiest I have ever made.  I bought parchment paper (as you suggested) to catch any milk that may have  boiled over onto the cookie sheet.  I’m sure I’ll use it again for other baking.   Shaking the milk, flour and salt was simple once I found a jar.  I even made a pan (of potatoes) the next day because they were so delicious.  After baking the potatoes the color was absolutely gorgeous and they tasted even better.  Our company loved the meal.  The best part was the simplicity of it.  Thanks for your suggestions also on which brands of foods you have found best through your many years of cooking.”
